Did you know that every one in ten people diagnosed with type one diabetes also gets celiac disease. Celiac disease is a disease that affects the small intestines if they come in contact with wheat, barley, rye, or malt (gluten products). If you're unsure of celiac disease or are unfamiliar with it, I'm at the least sure you've heard or read on labels "gluten free". Well, that's the life of a person diagnosed with celiac disease. They live a gluten free lifestyle.
Cadence was diagnosed with celiac disease two months after her diabetes diagnosis. Just when we were familiarizing ourselves with her new life as a type one diabetic, we then had to learn all about living a gluten free lifestyle. I'll never forget that first shopping trip. I was standing in an aisle at Publix in tears. It was overwhelming to say the least! Now that we are almost a year into a gluten free lifestyle I wanted to share delicious recipes that we make here at home, hoping to spread awareness around celiac disease, as well as delicious recipes along the way!
If you have a gluten free recipe that you'd like to add, feel free to email me (contact email is on the home page of this blog) and I'll post the recipe along with credit to you (if you want). Remember, pictures are a wonderful way to entice others to want to make your meal, so the more pictures of your recipes, the better!
Gluten free recipes are also great for those who are gluten intolerant. Although they do not have an official celiac diagnosis, if they consume glutenous products, they can be sick for days after. Gluten free recipes doesn't have to just be for those with celiac or gluten intolerances, it can be for anyone to enjoy. Neither my husband or myself have celiac, but we have chosen to go gluten free since Cadence had too. You cannot tell a difference in taste in most things and we feel great about eating in our gluten free household!
